The fruit of over 650 hectares of vineyards at Averești Domains is passionately transformed into premium, aromatic, and sparkling wines. Each year marks a new chapter in our winemaking journey, where we meticulously tend to the vineyards and craft them into exceptional wines, appreciated both in Romania and internationally.

Major Investments for Premium Wines at Averești Domains

To meet the challenge of creating wines with local, premium, and globally appreciated characteristics, Averești Domains has invested over 20 million euros in plantations and modern winemaking facilities. Today, Averești Domains is among the largest wine plantations in Romania, with 650 hectares of noble vines.

The new winery at Averești Domains is equipped with advanced technology and includes four main areas:

  • Production Area - Fermentation: With a capacity of 1 million liters, optimized for must fermentation with rigorous temperature control.
  • Conditioning - Storage Area: With a capacity of 5 million liters, designed for maturing wines in ideal conditions, preserving their aroma and character.
  • Bottling Area: With a capacity of 1,200 bottles per hour, equipped with state-of-the-art technology for fast and efficient bottling.
  • Wine Maturation Area: Wines mature in glass and barriques, an essential process for developing complexity and character, especially for red wines.

Stages of Winemaking at Averești Domains

  • Grape Harvest: Grapes are picked both manually and mechanically at different stages of ripeness, ensuring balanced and aromatic wines. The harvest begins on September 15 and lasts for up to four weeks.
  • Maceration and Pressing: Grapes are macerated at low temperatures, and pressing is done cold to extract clean, aromatic must.
  • Fermentation of the Must: The must is fermented in stainless steel vessels at controlled temperatures to preserve the freshness and natural flavors of the grapes.
  • Young Wine: White and rosé wines are bottled for immediate consumption, preserving their freshness and fruitiness.
  • Wine Maturation: Wines, especially reds, are matured in bottles and barriques, developing the complexity and character essential to Averești Domains’ standards.
